Given time to become more tender and flavoursome up against our dry aging salt wall. Dry Aging is a traditional process that allows beef to reach its full potential. Large cuts are hung in a carefully controlled environment where temperature, airflow and humidity are closed monitored. Over time, natural enzymes gently break down the muscle fibres, making the meat more tender while concentrating its natural flavour. 

Our Himalayan salt wall plays an important role in this process. The salt helps regulate humidity within the ageing room, creating a stable environment that supports safe, consistent ageing. It also helps inhibit unwanted bacteria while allowing beneficial ageing to take place.

The result is beef with a deeper, richer flavour, improved texture, and a distinctive character that can only be achieved by giving it time and proper care - something you simply cant rush.
